Ah, resolved I think. I copied over linuxmint-keyring.gpg and linuxmint.key.asc from the TimeShift snapshot into /etc/apt/trusted.gpg.d. An apt update seemed to be working fine.

Just a note that I'm running 20.2 MATE with the Mint-X theme - when I hover over the Mint menu icon, a textbox appears which says "Linux Mint 20.2 Uma". I assume that this is what the OP is referring to. Anyway, I thought I'd just add into the mix that it works fine for me.

Using the same partition as both the Timeshift snapshot partition and also a data partition may cause problems unless you are in full control of when that partition gets mounted and unmounted for both uses. I don't know if it is relevant, but the line in your fstab should be UUID=, not UID=, no?
