<shrug> Local files being encrypted by NextCloud and seemingly then in at least some cases without the operator having been very explicit about wanting this to happen is such an oddity that, if I take it at face value, I would advise to completely purge the complete and utter piece or horrid garbage...

Ubuntu and Mint installs its bootloader to /boot/efi/EFI/ubuntu/ -- which, mind you, is not part of the /boot filesystem but of the EFI System Partition mounted at /boot/efi/. It's ProtonVPN; your DNS-setup got disturbed (and seemingly your Firefox is using Cloudflare rather than the system DNS).
