I took the plunge yesterday, changing UUIDs in /etc/crypttab and swapping out the hard drives on bare metal. Not sure how Linux handles drive descriptions (which drive becomes /sda, /sdb, etc), but I plugged the new drive right into the old drive's SATA port just to make sure. Everything worked fine...

To have more confidence in your process, I suggest trying it out in a virtual machine. It's going to be a bit long but I think it's worth it. You dont need to have several virtual drives for the virtual machine, just make different LUKS containers on a single drive. Boy... I could've thought of thi...

Good point. How do I get around that? Leave everything set to /dev/sdb and just change the uuid in /etc/crypttab?

My /home folder is getting too large for the drive it's currently on, so I need to put in a larger drive and move it there. Since my setup is a little more complex than the default Mint install, I'd appreciate it if some of the more experienced users could give me a sanity check on what I'm planning...

You've recruited one new member to the hate club.I have a long term hate of the 1xxx series HP's due to all of the issues I have seen hundreds of them have.

I doubt that the Win7 boot loader has changed much, so I'd try using that old 2013 disk.
Note that it is also possible to create a USB rescue stick; if all your disks fail you, I'd try that. There are good reasons why we've moved away from optical media in the last decade, after all.

Weirdly enough, the problem seems to have resolved itself. Changes now remain permanent. I'll mark this as SOLVED, although the solution isn't quite clear.
