...spoke too soon, even with the css trick, it still reverts / auto-resizes back (regardless of clearing cache / cookies etc...) :|

...the first one isn't something to worry about.
The 2nd one is a indeed a bug, which seems to happen in some of the newer kernels occasionally.
Try updating the kernel to 4.13, 4.10 isn't supported anymore / receiving bugfixes...
What's your complete inxi -Fxz?

"sudo: unable to resolve host" => that is probably a different issue altogether...

What does locale -a -v return?

If sudo update-locale LANG=en_US.UTF-8 doesn't fix it, try:
locale-gen en_US.UTF-8
dpkg-reconfigure locales

Can you try starting it in Compatibility mode?

If that doesn't do the trick, it might need the "nomodeset" instructions presented in the same page.

Yeap, disable them first. First time installing with no previous experience is quite frequently somewhat of an...ordeal :)
No worries about not having previous knowledge, folks around will certainly help you in whatever obstacle you might encounter...
