in the terminal & hit Enter? Or, maybe reset

Does it make any difference if you disable the touchpad:
Reboot & touchpad should enable again. If not:

Getting into Grub can be a bit tricky, so try Timeshift first. You can restore a Timeshift snapshot using your Mint install media.
