The upload had full sound as far as I can tell. I'm shocked I don't recognize the song, but it sounded really good. Could be pulseaudio's config got messed up. With the check mark highlighted for the headset mic, go to the terminal and enter arecord -d 10 test-mic.wav which should record for 10 seconds. Speak into the headset mic during this time. When it ends, then enter aplay test-mic.wav to see if the sound was picked up properly. If that was successful...

The only update that I think could have affected you (and I say this because I have no idea what it contains) is ubuntu-system-adjustments.

I myself don't know how to downgrade that package, but someone should be able to help if you want to try that.

Yes, as in restart. I'm just a little nervous with the errors you're getting that maybe the system won't boot back up. I have seen no evidence that this would happen, but it's not my system, so I'm playing it safe.

Leave the dell-headset-multi. In pavucontrol, click on the check mark next to the Headset option then test.

Caution. Your images are including links next to them that look a little spammy.

Looks good. Did you try rebooting just in case? The dell name is just the name the kernel developers gave to the quirk that adds headset support as it was for dell machines when first written. Your default.pa looks fine to me. Hopefully we just need to find the correct quirk to get this working. Hi alqi.

In the terminal run aplay -l and you'll get a card number for the ALC270 Analog card. Use that number to then run amixer -c# (replacing # with the number you got in the first step. Paste that output here, along with the full output from inxi -Fxz please.

This might assist in finding the BT issue:

It could be your device needs a firmware update and that command will help those that know this stuff determine what might be needed.
