Perhaps you could try a dock like Cairo or AWN or Docky and find some way to hide the cinnamon menu bar?

I'm also seeing an issue where I copy a file and when I right click the Paste option is greyed out in the context menu
I can still click it or press Ctrl V but the text colour should be consistent, it's annoying.

Context menu underlines disappearing?

Hi guys, noticed when I right click on the desktop or a file or folder and the context menu appears, and then I move the mouse away, the underlines on the menu options (for the shortcut keys) disappear for some reason, is it a bug?

What a beast of a machine, with 8GB RAM I hope you're using 64bit edition? :shock:

Anything taking up CPU in top? I doubt it would make a difference... but I'm not sure how Linux runs on 8 cores (lol I didn't even know there were 8 core i7s)

Run top in a terminal to see processes using most CPU:

Try Menu -> System Tools -> Log File Viewer

or in Terminal

tail -f /var/log/syslog
(this will show the last entires and update on new entries, so if you have it open when it freezes you may see something)

Try go into the Preferences and Security tab and delete your password if it's in there remembered?

Otherwise you could separate your user accounts on Mint itself instead of all logging into one account, divide and conquer! :)

You could create user accounts for the people you share with and then just log off when away from the computer? I don't use it but just launching Thunderbird there shows a "Remember password" checkbox when you add an email account, just leave that unchecked and it should ask you to login when you op...
