Your easy options are to use a Windows Recovery Disk (or your original system disk) to repair your Windows installation, or to reinstall Mint in a minimal "/" partition (15GB will be more than enough) and set Windows as the default boot option during the installation.

The current version of Unetbootin (either on a linux distro or Windows) should produce a bootable USB stick. If what you have is an eeePC-701, buy a 4GB or 8GB SDHC card, shove that in the slot, and use it for a separate "/home" partition. That way you can run any flavour of Mint you like. I have Mint11 RC main edition running perfectly in just that environment.

This is good advice. Mint will work well, straight out of the box, on the vast majority of netbooks, but running a live USB stick is a very good test for the products on your short list. You may have been on the cautious side, perhaps, in this specific case, but I would have done the same.

It's not so much the user-generated files (.doc, .jpg, .mp3 etc), but rather the hidden application settings, that could otherwise get confused.

In my experience, two netbooks (an Acer and an eeePC), and one desktop without a built-in CD/DVD drive (Lenovo), boot automatically from the relevant optical disk when an external CD/DVD reader is connected via USB. YMMV, of course, but I think that you're likely to be on safe ground.
