The override is run separately from the normal command, but I don't see it making any difference.

Last try for me, as I'm out of ideas. Post the results of inxi -dxxx; wanna make sure that your CD device is correct.

Using the Menu Editor, try adding --device=all to the Rhythmbox command, preferably right after the word run.

Open Timeshift, click Settings, then Schedule. This will give you all the options for scheduling/retaining snapshots.

Since Calibre is a QT5 application, you'll need to run QT5 Settings (Settings ---> Preferences) to change the overall look (it will NOT use your theme).

Can you upgrade your Nvidia drivers to the latest (currently on 430.40)? You might want to upgrade your kernel as well.
