The most common known issue with root goes to read-only is because the O/S suddenly can not write to / partition ; so we can assume that it would be a hardware issue : it could be disk, cable (connect disk to motherboard) or motherboard (port) . One of the main pro is a well built AppImage can be used on different linux. A good example is linphone app image ; I can use the same image on both linux mint (ubuntu) and manjaro(archive)

Your /dev/mapper/mint--vg-swap_1 partition does not show up in blkid output.

This could explain in part the slowness of your boot , especially when you have resume defined in /etc/initramfs-tools/update-initramfs.conf
something like : resume=/dev/mapper/mint--vg-swap_1
