I somehow got it to work by wiping the drive and reinstalling several times while desperately trying any solutions to similar problems found online. Honestly not sure what fixed the issue. Sorry for not replying earlier.

After reinstalling Mint it won't boot from SSD, instead displaying GRUB menu before entering busybox. It did work with same hardware before reinstallation, however in BIOS mode instead of UEFI. Marking as solved, decided to not risk and instead just installed mint again to the free space.
If someone is reading this, you can move boot partition but you'll probably have to reconfigure some things.

The weirdest thing is Mint booted and worked correctly for at least 2 weeks, and this particular error should only happen on first boot. All data on the disk is completely readable and nothing is corrupted. I ran many btrfs/disk checks and boot repair but none of them detected any issues. Only tryin...

[Solved] Will Mint boot if I move it's partition?
By mistake I installed Linux Mint (19.3) on a partition in the middle of the drive, and that (I think) causes the "attempt to write/read outside of hd0" error.
Gparted allows to move partitions, but it shows the warning that says moving partitions has a chance to break system boot.
