AppImages will eat a lot of hard-drive space especially if you use many of them, but on the other hand if you encounter dependency conflicts with installed Deb. packages AppImages is a way of working around that problem if one of the conflicting programs is offered as an AppImage.

The first problem you have is that Win7 is installed in legacy mode and Mint is installed in UEFI. As far as I know, you won't be able to add Win7 to your boot menu because of the difference in install method.
