The problem is, uninstalling Grub Customizer doesn't undo all the changes it made when installed. At this point, the only way to do that might be to purge-and-reinstall Grub, which is not a trivial undertaking. See tutorial. Alternatively, live with things as they are. Your choice.

What you should do is solve the problem. Perhaps your system partition is too small. Perhaps you modified Timeshift settings (e.g., to include data files in snapshot) (not a good idea) and that's what filling the space. Perhaps you have a runaway log problem.
