Are you able to click the minus sign in the disks application? This will delete the partition (be careful the flash drive is selected and not something else).
Then you should be able to format the drive, you can pick the LUKS option and set a password for it so the drive will be encrypted.

I would setup virtual box with multiple VMs, one different for each DE you want to try and setup a shared directory in the host to work on your files while you do the experiments. When you are happy and decide to stick to a specific DE, setup that on your main box from scratch.

One does not need to install an OEM kernel to get a 6.5 kernel. One just needs to select the 6.5 HWE kernel in Update Manager. I was testing in a 21.2 VM and there was no option to pick 6.5 until i installed the 6.5 headers. For the OP this was probably not necessary as he was already running 21.3....
