Well-I went ahead and did it.

After deleting the 2nd partition, fstab was unhappy because it was trying to mount a device that no longer existed...

It wouldn't allow me to even get to a command line - So I had to reinstall :(

It's installed and running - I just wish I didn't have to do it...

Thanks for the timley replies! Other info - I keep all of my neccesary data on a network share on another drive, so deleting /home won't be an issue. I don't want to mess with the 188GB too much because it s a share on the network for pictures and video. New plan: -gParted live CD -delete /home part...

I have a gParted live disk...

1.) Load it
2.) Delete / Partition
3.) Delete /Home Partition
4.) Take free space and create a new mount point of /.

Does that sound right?

Or do I have to do this from within the OS - meaning using it from the installed version rather than the live CD?

More Strange things... Since the test page worked - I tried a pdf, spreadsheet, a webpage, and a document. All worked (except for the jpg on the webpage). However, I still have that error message and the printing takes a LONG time... So I'll limp along - but any ideas on getting rid of the error mes...

Please don't take this the wrong way, but why would you want to use mint for a sever OS? I'm assuming that you mean 'server' in the home server context and not 'server' as a server that you'd have at a data center? I just put in the link above...
