You know your system best, of course, but I haven't had any issue with using only 1 or 2 Gb swap (on systems with 3 Gb RAM) - and Mint seems to fit in less than 18 Gb, but 20 wouldn't hurt in the slightest. As for your /home-concerns - as long as you set the mountpoint correctly, it should show up ...

Sorry to be such a n00b but on page 16 of the userguide for Mint 8 it states swap should be twice the size of RAM.
