Have you tried removing all the cache and config data and starting over
That flatpak is working for some, is an indication that it might be old data related

Installed it to an externally 'thunderbolt' connected SSD
Installation was trouble free.
Installed system is really smooth. I too, do not favour the new look.
Installed Wine and that went well for the apps I use
I'd have no trouble recommending it

You could make a clone of it with ddrescue and add ionice in the mix
But you need a target that is ideally slightly bigger than the source

I have never investigated this but wouldn't it be better to edit the iso with isomaster and then write that?

Has it been used before for something? The zoom software generally work fairly well. But it's not very well tested and little behind the Windows and Mac versions. I host meetings regularly and can't rely on the Linux version. It has a habit of crashing the app when video sharing. So I use Windows when using zoom Sadly it can't be helped ...

When you use the installer in either legacy or efi mode it defaults grub to sda
That's sda as in the MBR
However, if you are installing as efi you need to use the drop down selector to install grub to the efi partition - for me that's sda1 but YMMV
