Much easier to edit /etc/default/grub to show grub menu at every boot for just 2 seconds.
Surely you can waste 2 seconds at boot to save a lot of palaver.

If you really want to try this do some preparation beforehand but use a new username account on the system such as user-xfce. Eg, To add xfce to à basic cinnamon version 1- Use command sudo apt install -s xfce ,(I'm not sure which package brings in the whole xfce desktop so it may be named different...

Best leave it to /mnt/USER as if it was mounted directly in /mnt, should anything else be mounted to /mnt you would lose the mountpoint of your data disk.

And as those files are data files presumably owned by you as user, you can mount them wherever you want to, even in your own /home. It would certainly make sense to use fstab to mount the disk (actually the partition or oartitions) at boot and it could even be worth creating symbolic links to folder...

After installing try shutting down the live system rather than rebooting it.
Once powered off remove the install medium (USB?) and then run the newly installed OS.
This way there should be no way for the computer to boot into the installer again.
