Well, I am not sure if there was an update that fixed my issue or not, but the scanner seems to be working properly today via Bluetooth from the installed session.

Today I ran a test on another, not the same but similar, computer. The computer I am having the issue with has Bluetooth built-in. @Lucap, I also brought this up and it was brought to my attention that this security flaw only affects Ubuntu 16.10 and 17.04, while Mint continues to be based on Ubuntu 16.04. So, I think we are safe for now and hopefully this will be fixed upstream before Ubuntu 18.04 is released next year.
