Switching to cinnamon (as simple as installing from software manager) eliminates this problem. I recall someone mentioned (on another thread here) that MInt developers had left Gnome and were working on cinnamon. I have the same problem on my workstation, after a couple of days gnome-shell ends up eating 800+ MBs.
