Hi, it's easy - just drag the menu items to the area, or right-click the menu items and click "Add to favourites". You can remove the icons by dragging them out of the favourites box.

Uhmm... Actually, the colourful icons are not from the themes, but from the applications, because those themes don't provide the icons for the applications. You can simply use another theme instead. I think they're not localized yet, because they are quite new. I'm using UK English and Cinnamon Settings still show "Color"

You can try this: Go to Cinnamon Settings (System Settings for Cinnamon 1.8 or above) - Panel - Use customized panel size - Allow Cinnamon to scale panel texts and icons.

Hmmm, lately I also tried Antergos. The preview desktop is Gnome 3, but I chose Cinnamon. Although I have a slow Internet connection, the installation was very quick. I think it's all right
I use Xubuntu with Cinnamon and kernel updates seem to do no harm to my computer. You can lock the kernel package in Synaptic, by choosing linux-generic and select Package -> Lock Version.

Kernel updates are considered "unstable" by Linux Mint, so these updates are hidden by default. You can enable level 4-5 updates in mintUpdate to show them, or use Synaptic to mark all updated packages.

I pretty much agree with you. Cinnamon needs more extensions and desklets (sorry, I'm too dumb to make one :) ). Right now there are only 2 desklets, apart from 3 default ones. I've been installing my fonts by copying them into Home/.fonts. It always works for me, except for root applications (because the fonts are only shared to myself).

I think setting Aliasing to RGBA is enough. I prefer it over ClearType, which makes it impossible to use other fonts in Windows 7
You can try some fonts to see which look best to you. IMO the default font (Sans) looks too "fat", so I use Droid Sans, size 9 - small but looks very elegant.
