On videos I actually like enough to save, I'll take the time to extract the audio (avidemux, audition or audacity), normalize and customize the audio levels to "majorly" reduce the difference between the loud and quiet portions (audition), then stick the audio back in the video file (avidemux again).

You didn't show the most important piece of the puzzle, namely the rsync directive. --modify-window=1 is useful (allowing times to differ by up to 1 second). I have a data partition with ~/.wine on it, and those files get copied ... too often? I run wine programs all the time. Pro Tip!

Boot the OS which has the time the most "ahead" - then if you make a mistake, you can boot the other OS and correct the mistake before it happened.
