This is not a trivial problem. If you don't have a reasonably handy way of viewing, installing and deleting fonts your computer is useless for simple graphic design tasks. /boot - 500MB (but only if installing on UEFI/GPT disk If a separate boot is used then it should be 500MB irrespective of the partition types, I think. We often see people here with broken systems due to a lack of space from not clearing out old kernels. 500MB gives a good buffer from that problem.

BTW, Ubuntu 18.04 has one (at Settings -> Devices -> Thunderbolt) Then that means you can install thunderbolt-tools in Mint.
