Well to be honest, I'm not 100% sure. I suppose there are other variables, but basically it appears you have 2 UEFI entries and the Win10 one works fine, and something is not right about the Mint one. But after you get the initial boot of Mint going, by whatever magic luck or something pounding keys...

I reverted to the previous kernel but the problem persists at boot. I can get to Linux now though. So something other than the kernel must be the problem, I guess. Unfortunately support for that driver has reached end of life at Nvidia, and so Ubuntu has followed as well.

You wont be able to fix that dependency issue. Nouveau is the answer. ;)
