Apparently, update-resolv-conf isn't working since Ubuntu 18.04, something to do with a change to netplan. You need confirmation that the server pushes DNS. If it doesn't then update-resolv-conf will not work. Do you see PUSH: Received control message: 'PUSH_REPLY, ..., dhcp-option DNS x.x.x.x ..... in the log? If so then it's up to you (the Linux client side) to set those DNS servers. --register-dns is a Windows option just like block-outside-dns.
It will be ignored so no problem >or just remove/comment those lines on non Windows clients.<

to the client config?
Then start the client, after failing connection, post the full log.
Replace only server IP with a.a.a.a or something.

Is there any way to view the server log? Preferably in the same way as above?

So you want to use Networkmanager (I don't) , then wait for someone.
if you mention Untangle, the OpenVPN forum response is "no help for you!
Not only for Untangle b.t.w., I also find this understandable.
