As far as I know, no.

The workspace switcher on the bottom bar mirrors the behavior of the workspace switcher in the Activities overview, so once you launch your first application, it automatically adds another virtual desktop.

I do indeed; there is a System Monitor Extension in the webupd8 ppa that you can also find GPaste in. Andrei's really good about including various extensions, it's nice to have a "one stop shop" for trying them out.

The top is "gnome-shell-extensions-weather".

The time/date desktop display I believe is a Screenlet.

At log-in, click on the cog wheel to the right of the user name text field. A menu should pop up allowing you to change sessions.

It will default to the last session used.

Which session are you using, MATE or Gnome 3? I don't believe the classic Mint Menu is available in Gnome, while it is available in MATE since the last batch of updates.

Codecs aren't on the CD version due to space issues.

That is why the team have included an "upgrade to DVD edition" option upon first boot, so nobody needs to feel like they are "missing out" because they didn't get the DVD version.
