You can move all the "personal" folders like Videos, Downlaods etc.. to the "data" partition and symlink them back to your home folder.

Thank you everyone for all, I had tried few things to fix it before it went down worse. Desktop was not loading, and important packages were missing. That's the default configuration for Xfce. It's what you would see if Mint had not customised Xfce.

It looks like all your customisation have been lost.

Do you have a separate home partition?

Is it mounted?

Is it corrupted?

That's the default Ubuntu grub. My guess is that a package update reset it to Ubuntu default. Mint is programmed to re-write some customization files (like /etc/issue and /etc/lsb-release) on boot. It must have restored it and fixed it at the next grub update.

You may want to reconsider re-installing, with the whole install on the SSD, including home. Then you can mount the old HDD inside your home and link the directories back to your home folder. That board is compatible with any recent Linux distro. However, it may not support the 3600 with the stock bios. You may need to find an older CPU to do the upgrade.
