well, since your computer cannot boot ( or cannot boot from your hard disk) and you figure out that is not grub problem. perhaps you can try using a linux recovery tool, come in as Live CD, use it to boot your computer, run totally in RAM. then it can mount all partitions, supports many formats and ...

When you mount /dev/sdb1 at a directory, you should see the /dev/sdb1 file system appeared. May be your previous formatting has some issue. I think you can format again. do you mean you see the terminal return to the same prompt without giving you error? That is a good sign. you can go to your /mnt and check if you see sdb1 inside

Also could you actually create a directory, or copy a file to /dev/sda1?

Ok, see your mint can see both sda , 120G and sdb, 80G.
It seems second drive , your new slave drive is recognise.

Now what you do is simple use Mint to mount second drive
sudo mount /dev/sdb1 /mnt

and see what it does on the terminal
