Creating another pin file won't change anything. Jessie already has a higher pin value (500) than Stretch. I'm not sure why you think the package was installed specifically from Testing in this case, unless it's the fact that both sources are listed together. Which makes sense, I suppose, as Jessie ...

That could mean the encryption is blocking the boot procedure. There should be a request for a decryption password some time during booting, but I assume that requires some kind of indication of encryption in the file system and I'm not seeing any in the blkid output in the boot-repair logs. Right. For some reason, update-grub hasn't used sda2's UUID in the command loading the kernel, but the one belonging to sda5. I don't know why that happened. It may be because of something among the copied files or perhaps the os-prober detected it couldn't read any user home directory. This is one ...

The fstab looks fine, but the grub.cfg from sda5 (which is the one that's used) shows sda5's UUID in some places where it should be showing sda2's UUID. I have to go out now, I'm afraid (already late), but I'll look at this more closely later today.

edit: I think it isn't only the sda5 Mint user account, it's the whole sda5 installation that ends up loading, no matter what Mint entry I pick Odd. That sounds as if the update-grub didn't fully work. Yet it did pick up the existence of the other installation. Could you show us what the /boot/grub...

Those logs don't provide much more info, I'm afraid. I still don't see any crypto_LUKS type in the fstab listings (assuming that is the way Mint marks encrypted partitions). Lots of things appear to have changed. When did all of this start anyway? And purging/fetching kernel files should take minute...

First of all, the boot-repair output doesn't seem to mention anything about encrypted partitions, so I hope the /home partition was no longer encrypted when you ran that script. That usually means the server/mirror in question is in the middle of updating itself and some of the files are inconsistent. It should resolve itself after a while. Try a different mirror if it takes too long.

My point is, that package also provides the other plugin. So perhaps you could do with just that package and without the other one. Provided the correct version number shows up.
