You need to run sudo update-grub on the ubuntu installation as this is controlling grub.

Sorry but you'll need to provide more information as the crystal ball isn't working today. What mint version and desktop, is it installed or running from a live image, how are you downloading and if in the browser did you specify the location?

Before you do anything with the partitions make sure you backup anything you wouldn't want to lose, also I wouldn't delete any partition unless you're sure you know what it's for.
