If the hotkey didn't change since Gnome 2, it's Ctrl+Left Super/Windows key by default. You can find that out in menu settings screen (it's accessible by right-clicking the menu button and selecting "preferences" in the context menu). (If nothing of that works forgive me for I am using Min...

Well, usually it's pretty easy... you can simply right click on your gnome panel, choose "add to panel" item and then select mintMenu from the list.

AFAIK mintMenu just uses Gnome's recent documents list which is stored in ~/.local/share/recently-used.xbel.

I had concerns that Gnome updates would break the extensions, and I also had concerns that Gnome 3 with all those extensions was becoming too heavy for my netbooks. Not to mention that there's no way to prevent extension conflicts, so carelessly installing too many of them might cause some trouble,...

It's Alt+right click in Gnome Classic. ("Thanks" for that Alt thing should be sent directly to Gnome developers.)
I suggest you log into MATE session instead, you'll find it much easier to configure since it's Gnome 2 fork.

That's right. It's GTK3 and D-Bus, not GTK2 and Bonobo compatibility layer. The fallback mode is not here to stay. The plan is for Gnome Shell to work with a larger set of hardware and for the fallback mode to disappear. In terms of UI, the fallback mode is something nobody wants. Gnome 3 enthusiast...
