Please boot the installation USB and post your system information as seen by LM21. Among other things, this will confirm the boot mode.

Are you able to boot to the live session desktop eventually? If so, please post your system information as seen by LM21.
Among other things, this will confirm the boot mode.

Repeatedly having to repair the file system suggests a hardware problem, either RAM or the hard drive.

Please clarify. Are you having a problem with VirtualBox the app? Or is it with one of your virtual machines? Those are very different problems.

To revert to using the old kernel automatically, open Update Manager > Linux Kernels and uninstall the kernel(s) you don't want to use.
Grub automatically uses the most recent kernel, so the only way to get what want is to make the desired default kernel the most recent one installed.

Have only a passing familiarity with hard drive diagnostics, but I believe that result indicates your drive is what's euphemistically called pre-fail, i.e., wearing out but "not dead yet." I'd replace it now, migrating over the data, but it wouldn't be reckless to wait if this is a backup ...

From what I've read so far, I will need to run fsck at some stage to attempt to repair the corruption on that partition. I ran Gparted off a live USB and it shows all 4 partitions on the HDD (I have a separate partition for /home). fsck won't do anything for a superblock problem. Doubt GParted will...

Well, I had no trouble installing a test system with encryption in VirtualBox (using EFI mode), so it can work.
As for your problem, I notice the error messages mention two different drives. What's that about?

If this is a BIOS computer, it's Right-Shift to bring up the Grub menu, not Esc.

My SWAG is that the Mint boot loader isn't where fstab expects it to be. Please report the output of efibootmgr -v and sudo blkid . As I recall, the main trick is that you want to do the work from a live session.
Also, that you want to delete or rename the auto-install home folder, so you're not mounting the partition over it.

fsck won't do anything for a superblock problem. Doubt GParted will either. Try this: Linux Expresso [sic].

Oh, Grub Customizer isn't all that bad. Main thing to know is that you have to pay attention if you want to uninstall it. Not difficult.
And to answer your question, there's no other GUI method (of which I'm aware) for changing boot order.
