I'd like to know why the XFCE takes too long to be released. In my opinion is the best, i don't speak for the others, but it would be great to have all the versions at the same day.

It's simply a matter of time and priorities. The Cinnamon and Mate versions are simply far more popular. That means they come first. When I give opinions, they are my own. Not necessarily those of any other Linux Mint developer or the Linux Mint project as a whole.
