Mac Mini 2.1, 1.83 CPU, 4GB RAM, £20 SSD from Amazon. Ran Mint 19.3, Mint 20 fine as well, after a few resolved issues with Lastpass. Sorry if this is the wrong thread to reply in.

My install was on a mid 2010 Mac Mini:
2.4GHz Intel Core 2 Duo processor
8Gb 1066MHz DDR3 SDRAM
NVIDIA GeForce 320M graphics processor
320Gb Serial ATA hard disk drive
8x slot-loading SuperDrive (DVD±R DL/DVD±RW/CD-RW)
I had to delete some apps (LibreOffice for one) as well as spelling dictionaries and languages, apart from English UK and Japanese, as this is machine is only used as a media player in the bar.
The only problem, if you can call it that, is this on boot:
Failed to Set MokListRT: Invalid Parameter
Could not create mokListRT: Invalid Parameter
Importing MOK states has failed: import_mok_state() failed: Invalid Parameter
Continuing boot since secure mode is disabled.
I've already Googled how to fix it but since I'm making coffee while the machine is booting I can live with it!

Upgrade on Acer Aspire 1 went smoothly and appears to have everything in order!
