I'm wondering if there is a way to set my ethernet connection to always default while connected to a US VPN Server? I know Ubuntu has this as an option in the network settings panel but can't find anything similar in mint.

Right-click on your network applet, choose edit connections then pick the adapter choose edit and then the general tab.
There you can choose to automatically connect to the vpn.
