You should go for a version with a lightweight desktop environment such as Xfce or LXDE. Maybe Mint with the Mate desktop will do. Mint has the following lightweight desktop environments:
- Xfce
- Mate
- Xfce

And what version? 10, 11, 12, 13, 14, 15, 16?

13 or 16
13 is a LTS version, it get support until april 2017
16 is a "normal" version, it gets support until july 2014
The other versions are no longer supported ( support for 14 ends next month )

I didn't realize there are so many EEEPCs still out there! I have a 1015 with a blown MB, if someone wants the rest for parts.

I went with Linux Mint Mate 17.3 version for an Intel Atom 32bit single core 1.66Ghz cpu.
Fastest browser for Youtube vids was Opera (12.16).
Using Mate and Opera, the speed and responsiveness is pretty good.
