The latest version supported by Ubuntu is 1.36.1 https://launchpad.net/ubuntu/+source/gvfs and by gnome 1.37.1 https://github.com/GNOME/gvfs/releases
The installed version with Mint 18.3 is 1.28.2 - which is lacking in support for writing to smb shares. If I install the Ubuntu package, can I expect things to break or is it safe to do this?

Most definitely, I would suspect. Mint 18.3 is based on Xenial 16.04, and the page you link to makes it patently clear that the latest Xenial version is 1.28.2-1ubuntu1~16.04.2.

I'm with catweazel: that will probably break something. You could try to install it on a spare computer, or in a Mint install in VirtualBox, and see what happens.
