Seems like I've been hearing for at least a year about the bug in the installer when doing UEFI boot. The installer puts grub in the first EFI partition it finds irrespective of what you tell it to do while installing.
Here is an example:

Does anybody know when this bug might be fixed? I suspect it might be years yet, though I wouldn't know why that might be.

I don't have any hope that it will be fixed until LM changes to a different installer like Calamares.

Thank you both. I now have a much better understanding of the problem.
The whole partitioning - boot manager - formatting scheme is far too complex IMO. It's been that way forever.

If LM decides to stick with a Ubuntu base, with Google's new Flutter installer, I may have to move to Debian.
