It was like that in previous versions of Mint, but I assumed that it might be a driver problem.
Now I have a new sound card, with a completely different chipset, also changed to Mint 20 but the problem is still there. Change the sound volume using the panel's widget, then modify the card's profile in Sound Preferences (analog/digital), then use the panel's widget again. Sooner or later, the panel's widget "deconnects", that is, changing the volume using it has no effect anymore. Yet, changing the volume in Sound Preferences or in Alsamixer still works.
