my version
I am now getting a choice at startup for either Mate or Uma. I usually have just started up in Mate so today I thought I would give Uma a try.
Now, how do I find out what version is running. uname doesn't give it. What command does?

Uma is Linux Mint 20.2. If you're not sure which version the other one is, you can run the command
inxi is a system information command installed on Linux Mint by default. Newer versions of Linux Mint, such as Uma, also have a System Information program in your menu which also tells the Linux Mint version.
inxi -S

Thanks for your help. In the menu is listed "System Monitor". When I opened it sure enough "Uma" was listed as my version,

Mate and Uma are not related to the same thing:
- Uma is the nickname of the latest Linux Mint version, 20.2,
- Mate is the name of one of the three available Desktop Environments for Linux Mint,
=> Linux Mint 20.2, or Uma, is available with three different DE, Cinnamon, Mate and XFCE.
I don't understand what you says "I am now getting a choice at startup for either Mate or Uma". GRUB menu should offer you to choose among the various different systems installed on your computer, and Uma and Mate are probably the same one "Linux Mint 20.2 Uma Mate edition".
Without the output of your inxi -S, nobody can help you further.

Looks like OP has two entries in GRUB menu, the default one (LM 20.2 Mate) and the second (LM 20.2 UMA on /dev/sdf1) would be as result of

I think os-prober can tell what version the other installed OS is, but it can't tell what desktop environment. So for the main OS, the one in control of GRUB, shows itself as "Linux Mint 20.2 MATE", and the other OS is shown only as the version "Linux Mint 20.2 Uma" (20.2 means the same as Uma).

There is no sdf disk ( ) and it looks like you have made some kind of repair you don't mention -
Any way, run# Bootability restore: Change id = 0A6179A2-FBDF-41FB-A792-EBB48F132FD4
UUID=f73ceb41-9395-d8c0-1827-b775946beecc / ext4 errors=remount-ro 0 1
sudo update-grub
and reboot to see GRUB menu again. If that other entry is still run sudo os-prober

I have not done any "repair" at least not intentionally. The only thing I can think did this is my backup. My computer has an easily swappable hard drive caddy, so I put a spare in my ultrabay and run Clonezilla. I do this quite frequently and after each time I swap the "old" SSD with the newly made copy. Perhaps some "repairing" occurs then.

Installing updates (as kernel) when that spare disk is attached would explain that second entry (the copy option) in GRUB menu. Running
sudo update-grub

Ran the grub update and now on reboot I no longer have any choices, it boots right up. The "old" SSD still boots that way as I expected it would. Thanks.

Yes it is. If no other system is detected grub menu wont be shown. I was wrong thinking you have modified grub default options in order to see that beautiful background on starting. Sorry.

That is an actaul photo I shot of a pond at a lake near my house. I use the same picture as my wallpaper, so nothing lost by the lack of a startup screen. Maybe when I do a kernel update I should have my extra hard drives unplugged? I use a docking station which gives me access to three storage hard drives.

That is an option, unplug before installing certain updates. As there is no other system installed, you can avoid grub re-write its config. file including such option when updating with spare disk connected. report, graphic driver is not charged correctly so you are using CPU for rendering not GPU. It looks like you have tried to install an alternative driver (from Driver Manger?) and failed. Maybe you only need to blacklist nouveau, ensure nvidia-drm is charged on starting, delete xorg config. file if you have created,... or need to purge nvidia driver and install it again.Graphics:
