As you can see, the icon is there next to update manager and it works like it it supposed to, but it will not appear until i untick and tick the option to "Show icon in menu bar / system tray" in the mailspring settings. It also works if I remove and add again the system tray applet. Is there a fix to this? It worked perfectly on 18.3 but i have this bug on mint 19.
My thought was using a command to sort of "restart" the system tray and put it as a start-up command after mailspring opens. Is that possible?

For the time I tried that mail client I had this bug too - M18.3. I think it's the program's icon that's bugged. Restarting the DE didn't change anything, so I'm pretty sure it's a mailspring problem.
P.S. "Tray" is a Windows term. Some people call that area "status panel", others call it "launcher bar" but AFAIK there's no such a thing as "tray" in Linux.
