I would like to remove the Nvidia icon from my taskbar. I prefer my taskbar to only contain icons for software I use. If I want to change the Nvidia settings I can just open the System Settings app.

Do the below: Right click on your Menu start Icon -> "Configure" -> "Open the Menu Editor" -> Scroll to and select the menu item you want to remove -> Delete button on the right hand side. This should remove the menu item you want to get rid of.

Sorry, I should have included a screen shot in my OP.
The icon I want to remove is the forth icon from the right in this pic including the Time and Date app.

If I click Quit the icon vanishes, but comes back as soon as I reboot.

You are talking about two different things.
The applet in your panel (that which you are calling a taskbar) is the nvidia-prime-applet which is a Linux Mint applet for identifying and switching between modes on your dual-graphics laptop. In the screenshot you posted (which matches your inxi output), the applet is an Intel icon because your system is running in On-Demand mode. If you do not ever plan to change modes and will always stay in On-Demand mode, then you can go to the Start-up Applications app and turn off the "Support for NVIDIA Prime" applet.
The Nvidia X server Settings app is part of the Nvidia driver. That is a different app with different functionality.

Sorry for using a "generic" term for panel. I tend to use generic terms a lot. For example, Kleenex for facial tissue, I type in aspirin for acetaminophen in my shopping list. Who the hell wants to type acetaminophen every time?
When you get into your 70's like I am, you might be doing it too...
In some cases we are able to guess, what a questioner means, but in this case this was not possible. So we needed to be a kind of pedantic. If you come into my age you will know this.
BTW, the word panel has less letters than the word taskbar. A real time-safer.
