You are not the first to come across this issue. There are a just more than normal at the moment I guess as LO6 has recently been released. It is basically all down to unfortunate package naming which means the obvious command to remove libreoffice takes more away than intended.
Just a note. If upgrading to a newer LO via PPA there is no need at all to remove the existing installation. It will be upgraded. Similarly if using Flatpak both versions can coexist so a removal isn't essential, although I appreciate many people like to keep their installed software tidy.
