How do you get GOG Deus Ex GOTY to work?
I tried the preset instaler, but I will at first get a blurred our low res version of my desktop wallpaper. Then if I try to get it to start after that I always get a "serious error".

Are you using POL, you mentioned an 'installer?' If not, I would recommend using it, but I never use their installation list for GOG games... check winehq.com for the best wine version to use(GOG games are their own version), and install it as an item not listed. Hope that helps.

Does this look like a safe option? What exactly is this? Does is cause system vulnerability like WINE does?

You are safe running GOG games in wine. But if you want additional protection you can sandbox wine with FireJail or use firewall rules to block network access.
But if you don't want use wine then you will need to search out linux native games. There are native engines like ScummVM and the sister project ResidualVM these two can play over 200 games and there's a new version of ScummVm due this week.
