So I’ve applied the updates from the update manager, and now the machine won’t boot without the previous kernel (5.10.0.12) selected in GRUB. ASUS EEE 4G lappy.

It happens, although not commonly. I would just wait for the next kernel update, or at least that'd be my approach in Ubuntu-based installations. If you're still having this problem after the next couple of kernel updates, I'd be concerned.
