Reset the BIOS. LM desktop has 2 booting modes, UEFI and legacy BIOS, try both. Also try disabling "secure boot", and not using Asmedia ports. There is no way to find out. And in followup - fedora boots perfectly fine. So it is not my hardware, it is Mint itself that does not support this particular Skylake architecture. Here is an option, if you are ready to improvise and research :
- use another computer to make a Mint install on an external hard drive
- boot that install, still with the other computer. Dont install any driver, but upgrade the kernel to the latest possible.
- try to boot that external drive with your Asrock.
If that fails, try to copy fedora's kernel on the Mint /boot, and put a grub entry for it. (I have no idea if this can work)
- When you are able boot the external drive on your Asrock, clone the Mint partition on the internal drive of the Asrock, and register its grub in the firmware.
(the last part would be simpler, because not needed, if you used refind as your boot manager)
No guarantee if this may work.

I believe you have the Kaby Lake in the 7th generation CPU. I have an i6700K which is Skylake and it is fine with Mint 17 & 18 both on my Asus Sabertooth Z170 S. Perhaps the LMDE (Linux Mint Debian Edition) 2 will support your chipset.

The box says Core i7 unlocked, i7-6700K LGA1151; CPU-Z version 1.78.1 x64 calls it a Skylake. The graphics card is a nVidia GTX 1060 6GB Gigabyte technology. Note - I did try putting i915.modeset=o into the boot parametners when the DVD first boots up, and it removed the error message about chipset no recognized; however it resulted in a completely black screen

Just tried LMDE - and it was a failure. It didn't give me any errors, just said loading please wait, and then sat there. No further DVD activity, no screen activity, nothing. Gave me a scare when windows thereafter would not boot. But at least that OS came back.

Hey elmarts. I have been away for a while, but if it is worth your time there is a Fedora derivative called Chapeau http://www.chapeaulinux.org that may fit your tastes.

Actually I found a Fedora 25 MATE (Fedora-MATE_Compiz-Live-x86_64-25-1.3.iso) since I do really like the MATE desktop. Will gird my loins soon and attempt to figure out how to install it to unallocated half of my SSD of 100 GB. Well, resurrecting and old thread - I tried the 18.2 beta mate release, and VOILA! it installed straight off with no problems. It is running on the SSD, but I note the following:
1) it is slow as molasses compared to win7
2) it does not see my second monitor at all
So - the OP "problem" can be marked [solved] -
