The easiest way is to open filemanager as an administrator and delete possible symbolic links. To list symbolic links you can use command ls -la /boot | grep "\->" in the chroot environment.

For avoiding that bus error, edit initrd line by adding pci=nomsi option.

When you have reached live-desktop, run

sudo mount /dev/sda1 /mnt 
sudo grub-install --boot-directory=/mnt/boot /dev/sda
sudo sync
sudo umount /mnt

Thank you all for all the help.

I quit and reinstalled Mint Sylvia. It was very unstable in the couple of days I used it. I then went onto installing Ubuntu 18.04 and that just showed me an error with my hard drive. Long story short, I swapped the hard drive for another old one I could get my hands on and everything is back to normal.

Waiting for Tara to do a final install of Mint in the coming month.
