I have my partitions set up as follows.
How am I going to be able to specify where to put the LM19 boot/root and make it honor my existing /home /swap /backup partitions?

since you don't have any /boot in the current setup, then you also shouldn't need it in the proposed setup.
in that vacant space, you can create Two New Partitions - - / root & /home - just like there already is . .
- you can call them sda3 & sda4 OR sda7 & sda 8 - - it won't make any difference . .
( primary OR logical partitions )
then use the 'something else' option & select each partition in turn,, marking them as / root & /home,,
and then click on Next to continue with the installation .
in that vacant space, you can create Two New Partitions - - / root & /home - just like there already is . .
- you can call them sda3 & sda4 OR sda7 & sda 8 - - it won't make any difference . .

but I cannot find a way to make it take sda4 as the /home partition.... the only option is to format it.
How do you do that when installing a 2nd OS ?

Figured it out, I missed the "mounting points".
and it did not update grub, so did that:
$ sudo update-grub
[sudo] password for john:
Generating grub configuration file ...
Warning: Setting GRUB_TIMEOUT to a non-zero value when GRUB_HIDDEN_TIMEOUT is set is no longer supported.
Found linux image: /boot/vmlinuz-4.13.0-45-generic
Found initrd image: /boot/initrd.img-4.13.0-45-generic
Found linux image: /boot/vmlinuz-4.10.0-38-generic
Found initrd image: /boot/initrd.img-4.10.0-38-generic
Found memtest86+ image: /boot/memtest86+.elf
Found memtest86+ image: /boot/memtest86+.bin
Found Linux Mint 19 Tara (19) on /dev/sda3
done
and it now boots up like it should:
