This '/media/fairway is not a mountpoint' tells me that it's a folder in the root filesystem, i.e., not a mounted partition.
So add 647G to the 19G of the / folder and that would be the total space used.
When I drill into /media/fairway it shows my internal and external drives. The one with the long name is the dual boot 500GB SSD that has ~415 GB to Win10 and ~85GB for linux. The BackupStorage is a folder on the space I created for linux on the 1.5/.5TB external drive (524GB).
Anyway - I haven't seen the error on either machine in a couple of days and will try and capture what I was doing and post if it reoccurs.

The only valid mountpoint in your fstab is /media/fairway/BackupStorage so it's storing everything in /media/fairway. You can fix this by creating a folder under /media/fairway named BackupStorage.

LVM was an option I selected during the Mint auto install process on PC2.
PC1 is the machine with the most frequent disk error and the one i'd like help on at this point.

In a terminal, please run the following commands on PC1 and post the results

Try this: du -h /var/cache/apt/archives/ & post the results.

It's quite common for old packages to accumulate filling up /. I think this one might catch quite a few people out .. :wink:

BG405, good catch. I never think about that because I've always set Synaptic to delete downloaded packages after installation. I think you're on the right track for fixing the OP's problem.

Bleachbit is dangerous and may wreck your system. Instead use this.
