Keeps booting in Windows

Installed Mint 19.1 and everything went fine except for the booting. It keeps booting in windows and I can't find a way to boot it in Linux. My computer is a first generation i7 with 8 gig of ram and a Nvidia GTX 260. I installed it along side Windows on a 250 gig ssd.

Grub menu will appear if you press and hold "Shift" key during startup,Then select the OS you want to load if you boot using BIOS. When your system boots using UEFI, press "Esc" key

For permanent change you'll need to edit your /etc/default/grub file -- place a "#" symbol at the start of line GRUB_HIDDEN_TIMEOUT=0.

Save changes and run sudo update-grub to apply changes.

which version of the Windows System is installed on that SSD ?

Is the machine an ACER of HP ?
If so, that's the reason. Their firmware/BIOS are buggy and do not register correctly that they should boot to GRUB.

My Lenovo Ideapad also insists on booting to Windows every time after a BIOS update.
I have to remember to modify the boot order in BIOS.

Which version of Mint are you using? That was the routine for 18.x, but it's different for 19.x. Besides, the installer automatically sets up Grub to display in dual boot, so unlikely that's the problem. More likely it's a BIOS/UEFI issue, as fabien85 says.

Please boot into Mint from liveUSB, run below commands in Terminal (ctrl+alt+t) to output system information and post results here.

Also, as requested by Pierre, which Windows version are you dual booting with.

Edit: 2nd command incorrect, corrected.
Mint Mate 19.1. Main rig is HP 800G2 I5 6500 16GB ram, 120GB boot drive, 2x3TB, 1x4TB data drives. Oldest rig is Mate 18.3 on Dell D620 with 32bits core duo.
